EASY MINESTRONE SOUP

Image
This is very delicious with a complex blend of flavors.  My family has been enjoying this for years.  There is some chopping and measuring involved but the flavor is more than worth it.  When I had the opportunity to go to Italy I ordered a lot of minestrone soup.  Of course, minestrone soup is always better in Italy, but this is close. Here is the recipe: EASY MINESTRONE SOUP A family favorite. There are a number of ingredients but still easy. Ingredients: 1 can drained cannellini beans  2 tablespoons olive oil 1 yellow onion, chopped 1 clove garlic chopped 6 cups low sodium meat stock 1 can diced tomatoes with juice 3 large carrots sliced 2 zucchini chopped 1/4 head of cabbage chopped 1 1/2 teaspoons dried basil 1 1/2 teaspoons dried oregano 1 1/2 teaspoon sugar 1/2 teaspoon salt 1/3 cup dried small elbow macaroni 2 tablespoons balsamic vinegar Heat oil in large pot.  Add onions and garlic until soft.
