Easy Pork Carnitas in a Slow Cooker

Oh my goodness this is easy.  And so delicious.  I am trying something different here.  I'm going to post three different recipes that go extremely well together.  The recipes can also be used for many different recipes. Easy Pork Carnitas in Slow Cooker Ingredients: 3 lbs boneless pork shoulder 1 orange cut in half zest from the orange 2 tsp. oregano 1 tsp. cumin 1 Tbs olive oil 4 cloves of garlic minced 2 Tbs oil I love the aroma of this cooking all day.  Place pork shoulder in slow cooker, sprinkle salt and pepper to taste.  Mix olive oil, cumin and oregano together.  Spread all over the pork.  Add the garlic.  Juice the oranges and pour over the meat.  Sprinkle the zest of the orange over the pork.  Add the two halves of the orange to the slow cooker and cook on high for 6 hours.  Remove meat from slow cooker - heat pan to medium high.  Add oil and sizzle the shredded ...

Easy Chicken and Vegetable Soup

This is an easy and simple chicken and vegetable soup in a slow cooker.  It has a teaspoon of curry in it that to my tastebuds is undetectable but adds a little something something to the soup.  I hope you enjoy this delicious soup now that we are heading in to colder weather.  I consider this a very healthy soup. Here is the recipe. Easy Chicken and Vegetable Soup Ingredients 1 - 1 1/2 pounds skinless boneless chicken thighs 4 cups low sodium chicken broth 3 medium carrots sliced 2 stalks celery sliced 1 medium onion chopped 1 teaspoon curry powder 1 teaspoon salt 1 cup frozen peas Instructions In a slow cooker place chicken, broth, 2 cups water, carrots, celery, onion, curry, and salt.  Stir. Cook on low for 8 hours or high for 4 hours.  Shred the chicken and add the peas.  Cook 10 mins longer for the peas.  Serve.  Easy!  Enjoy!! (I found this recipe on Food Network Kitchen....

Easy Split Pea Soup - Slow Cooker

I love split pea soup.  It is so easy to make.  Here is what is needed to start with: I forgot to add the salt to the photo, sorry. The recipe I follow is one I have had for years. EASY SPLIT PEA SOUP - SLOW COOKER I have been making this soup for years.  The family loves it. Ingredients: 1 package of dry green split peas (rinse til water is clear) 1 package Turkey Polska Kielbasa (I use Hillshire Farms) sliced 2 carrots peeled and sliced 1 whole yellow onion chopped 1 green bell pepper seeded and chopped 4 cloves garlic minced  1/2 teaspoon salt 1 teaspoon dried oregano 1 teaspoon dried basil 42 ounces low sodium chicken broth  Everything in to the crock pot and stir.  Cook on high for 6 hours.  That’s it. I serve soup with crusty baguette. Please comment
