Easy South Western Chicken Breast

I used to have a tendency to over cook my chicken.  I was so fearful I was going to under cook the chicken that I way overcompensated.  So my entire family was excited that I learned how to use a meat thermometer.  The only work part of this recipe is that the breast needs to be pounded to make it even.  This enable the chicken to cook evenly. Ingredients 2  chicken breasts boneless and skinless 1 tsp. ground cumin 1 tsp. chili powder 1/2 tsp. garlic powder 1/2 tsp. salt olive oil I place the chicken breasts in a plastic ziplock one at a time.  Pound the breasts until they are thin but even and then the other one.  I used a large utility pan.  Drizzle a little olive oil on the pan and then the chicken.  Then sprinkle the seasonings on the top.  Preheat the oven to 375 degrees.  Bake for 20 min then check to see if the chicken is 185 degrees Enjoy!!!

Easy Chicken and Vegetable Soup

This is an easy and simple chicken and vegetable soup in a slow cooker.  It has a teaspoon of curry in it that to my tastebuds is undetectable but adds a little something something to the soup.  I hope you enjoy this delicious soup now that we are heading in to colder weather.  I consider this a very healthy soup. Here is the recipe. Easy Chicken and Vegetable Soup Ingredients 1 - 1 1/2 pounds skinless boneless chicken thighs 4 cups low sodium chicken broth 3 medium carrots sliced 2 stalks celery sliced 1 medium onion chopped 1 teaspoon curry powder 1 teaspoon salt 1 cup frozen peas Instructions In a slow cooker place chicken, broth, 2 cups water, carrots, celery, onion, curry, and salt.  Stir. Cook on low for 8 hours or high for 4 hours.  Shred the chicken and add the peas.  Cook 10 mins longer for the peas.  Serve.  Easy!  Enjoy!! (I found this recipe on Food Network Kitchen....

Easy Chicken and Rice

This is very easy to put together and the taste is delicious.  So if you want to try something easy and simple this is for you. Here is the recipe. Easy Chicken and Rice Ingredients 4 half chicken breasts 1 can cream of mushroom soup 1 package dry onion soup 1 cup water 3/4 cup uncooked rice Instructions Combine mushroom soup, half of dry onion soup, water, and rice.  Place in a greased baking dish.  Place the chicken breasts on top.  Sprinkle the rest of the dry onion soup mix on top of the chicken and the rice.  Bake covered in a 350 degree oven for 1 hour. Easy. Enjoy.

Easy Chicken in Wine Sauce - Enjoy

This is one of the easiest recipes ever.  Nothing to it.  Anyone can make this and feel like a chef.  College students or young adults.  Try it, it is wonderful. Here is a photo of the ingredients: I like to chop the chicken up to smaller pieces too. And here is the finished product. A little bit of heaven.  Yum. Now here is the recipe - I hope you love it as much as our family!! Easy Chicken in Wine Sauce Ingredients 1 1/2 pounds boneless skinless chicken (I prefer thighs) 2 Tablespoons Butter 1 onion chopped 3 carrots chopped 1/2 cup frozen peas 1/4 cup wine (I prefer white wine) 1 can of condensed cream of mushroom soup Instructions In large skillet melt butter.  Saute onion and chicken.  Add carrots, peas, wine and cream of mushroom soup.  Simmer covered 35 minutes.  Serve with rice.  Easy.  Enjoy!! Ridiculously Easy Chicken - Soy Sauce and Sugar - Ridiculously Great

Just had this at my brother-in-laws house and stole the recipe.  It is fantastic.  I can not say it is a family favorite.  But it clearly will be when the rest of the family tries it.  Right now, just my husband  and I love it in our family.  That will change, as soon as the others try it.  Here is the recipe.  Enjoy! Ridiculously Easy Chicken - Soy Sauce and Sugar Ingredients 3/4 cup soy sauce 1/2 cup sugar dash of worcestershire dash of hot sauce 6 Chicken thighs boneless - skinless Instructions In a 9 x 13 baking dish add the soy sauce, sugar, worcestershire, and hot sauce.  Stir several times for about ten minutes.  The sugar will not completely dissolve - no problem.  Add chicken flip over a couple of times to coat both sides of the chicken.  Bake uncovered at 350 for 50 - 60 minutes.  Remove from oven and while the chicken is cooling flip it a few more times in the sauce. ...

Easy Chicken Curry

I love chicken curry.  This is again a family favorite.  Super simple to do.  Any one can do it. Here is the recipe.  I prefer it served over rice, but over pasta is good too.  Tonight we had it over baked potatoes. Easy Chicken Curry This is another one of my easy recipes.  I got this recipe from a friend of mine about 20 years ago it was a family favorite of theirs too. Ingredients: 1  whole onion chopped 1  tablespoon olive oil 1  package chicken tenders or chicken breast (about a pound or pound and a  half) 2  cups chicken broth 2  tablespoons tomato paste 1  tablespoon curry 1  peeled and chopped apple 1/2  banana chopped 1/2  teaspoon salt Instruction: Saute onion and chicken in the olive oil.  Then add chicken broth, tomato paste, apple,  banana, salt and curry.  Bring to boil and reduce to simmer covered one hour....
