Easy Rack of Lamb

Our family makes this for special occasions.  Hope you like it. Easy Rack of Lamb This is also a family favorite.  I found out about rack of lamb one night when I was watching my daughters at swim practice.  One of the other moms mentioned she was heading home to fix it.  She said it was very easy and was it ever.  Hope you love it as much as we do.   Ingredients: 1 package Rack of Lamb 1/4 teaspoon of each salt, garlic powder, basil, oregano, thyme, rosemary, 1/2 teaspoon curry powder Instructions: Preheat the oven to 400 degrees.  Place the rack of lamb fat side up in a roasting pan.  Sprinkle all of the seasonings over the top of the rack of lamb.  Roast until the thermometer reaches the desired temperature.  We like 155. Enjoy!

Easy - Crock-Pot Corned Beef - Super Easy

The family loves this corned beef.  I have everyone making it this year.  Even my Dad and my daughter.  I believe my sister also asked how I make it.  Here it is: Easy Crock-Pot Corned Beef Ingredients: 3-4 pounds corned beef with spices included (I prefer Flat Cut) 1 1/4 cup water Instructions: Place corned beef in crock-pot fat side up.  Open spice packet and sprinkle on top.  Pour the water on top.  Cook on low for 12 hours or on high for 6 hours.  I usually do six because it work better in my schedule. Enjoy!!  Super Simple.

Easy Cheese Toastie - Comfort Food - Super Easy

This is about the most simple ever recipe.  I feel this is one of my most lovable recipes.  When I was lucky enough to be backpacking around Europe in 2016 with my daughter - this became my go to meal.  It just hit the spot for me.  I usually have ham in it, but it is lent so cheese it is.  Hope you enjoy this! Easy Cheese Toastie - Comfort Food One serving: Ingredients: 2 slices of bread - I use whole wheat 2 slices of Havarti cheese - any cheese of your choice works Instructions: On medium low heat just place the cheese between bread and heat.  Heat til cheese is melty.  It’s that easy!!  I consider it a diet grilled cheese because no butter is used at all. Enjoy!!
