Easy Taco Salad - Simple



This is fantastic and super easy and simple to make.  So tasty.  I believe it is very healthy too, but that is just my opinion.

Here is the recipe:



Easy Taco Salad


Ingredients:

1  head of iceberg lettuce (or whatever type of lettuce you like)

1  small can of corn drained

1  medium can of sliced olives drained

1  14 oz can of black beans - low sodium (or what ever you prefer)

2   tomatoes diced

1  pound of ground turkey browned (or ground beef)

1 package Lawrys Taco Seasonings

Ranch salad dressing

BBQ sauce

grated cheddar cheese or what ever you like (I didn’t have any it is great without cheese too)

crushed tortilla chips  sprinkled on top (I didn’t have any of these either - still great without)



Instructions:


Brown the turkey.  Drain the fat.  Add the seasonings plus 1/4 cup of water to the browned turkey.  Simmer a while to blend the flavors.  While the turkey is browning, drain the corn, olives, beans and place in a container.  Dice the tomatoes add to the container.  I now place the container in the refrigerator to chill.  Cool the turkey and seasonings.  Now, I rinse the head of lettuce and rip in to bite size pieces.  I place in a separate container (because I don’t have a large enough container to accommodate the entire amount).  When the ground turkey has cooled enough add it to the corn, olives, beans and tomatoes container and stir.  Place both containers back in the refrigerator to chill.  Assemble on a large plate, layer of lettuce and heaping amount of the mixture of corn, olives, beans, tomatoes, and seasoned turkey on top of the lettuce.  If you have a large bowl you can toss it all together too.  Drizzle ranch dressing and BBQ sauce on top.  Add cheese if you like and crushed tortilla chips on top.  Enjoy.  Very Easy.
