Easy Cheese Enchilada Casserole

Seriously good!!!  I've made it three times this week.  My husband loves it and I forgot to take the pictures to post.  I hope you enjoy this recipe.

Easy Enchilada Casserole

Ingredients:

Lawry’s Enchilada sauce seasonings mix

3 cups water

1 can 6oz tomato paste

8 corn tortillas

2 cups shredded cheddar or a blend

Instructions:

Follow the package for how to make the sauce.  Then I do something different, but much easier.  Take a 7 x 11 inch pan or a two quart dish.  Heat the oven to 350 degrees.  After you follow the package instructions for the sauce and simmering is done.  Then dip each of the eight tortillas into the sauce and place on a separate plate. Put about one cup of sauce in the pan. Place four of the tortillas overlapping on the bottom of the pan.  Then open the package of cheese.  Spread the entire package evenly out in the pan.  Then overlap the last four tortillas on the top of the cheese.  Take the rest of the sauce and pour it on top of the tortillas. Pop it in the oven to 20- 25 minutes uncovered.  I do wait 15 minutes before cutting in to it.  Enjoy!!
